Calabasa Soup

In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sauté until softened.

Add your choice of vegetables like carrots, celery, and bell peppers. Cook until they start to soften.

Add any grains like rice or pasta and cook until they are tender.

Season with salt, pepper, and herbs like thyme or basil. Stir in leafy greens like spinach or kale just before serving.
